How to make brown sugared pecan strawberry chicken bites

In a small pot, melt 1 stick of butter

Add 3/4 cup brown sugar, 2 tsp vanilla and a dash of salt

Cook over medium heat just until smooth and combined; then pour over 16 ounces of pecan halves

Stir and coat well. Line a sheet pan with parchment paper and spread pecans on pan

Bake at 325° for 25 minutes, stirring twice at every 10 minutes. Once out of oven, allow to cool completely

Next, dice some strawberries

Dice some roasted chicken. I roast my own (Lime Rice and Roasted Chicken guide) but you could also just buy a rotisserie chicken.

On a toothpick, layer strawberry first, then chicken, then your sugared pecan. Make sure not to poke all the way thru the nut or it will crumble and fall off
